Pork Tacos with Kiwi Lime Salsa

Ingredients:
-1lb ground pork
-2 tomatoes
-1 red onion
-1 poblano pepper
-2 kiwis
-cilantro
-2 limes
-1 packet of taco or fajita seasoning
-Oil (I always use olive oil)
-flour tortillas

Directions:
-Halve, peel, and thinly slice onion
-Mince a few slices of onion until you have 2 Tablespoons, put in a medium bowl and set aside
-Core, seed, and finely chop poblano pepper
-Core, seed, and dice tomatoes
-Peel and dice kiwis
-Roughly chop cilantro
-Cut limes into wedges
-Add tomatoes, kiwi, cilantro, and a squeeze of lime juice to bowl with minced onions and mix together. Add a dash of salt and pepper to season. This is your kiwi salsa!
-Heat a large drizzle of oil in a large skillet over medium high heat. Add onion slices and poblano pepper and cook for 3-4 minutes
-Add ground pork and taco/fajita seasoning packet to skillet and cook thoroughly. Drain grease.
-Use tortillas to make your tacos with meat filling, kiwi salsa, sour cream, shredded cheese, and a squeeze of lime.
